Project Title: Overweight, Obesity, Wellbeing and the Foodservice Industry
Rates of overweight and obesity are increasing and although causes are multifaceted, the foodservice industry is invariably implicated: people are eating away from home more often, and the industry has adopted activities such as product bundling, super-sizing and all-you-can-eat buffets. In addition, there is currently an increased emphasis and greater dynamic focus on the population's wellbeing.
Aim
The aim of this PhD would be to critically evaluate the role and responsibility the foodservice industry has towards overweight, obesity and wellbeing.
Specifically the objectives would be to:
Review and assess the effects and contribution various business practices have on overweight and obesity.
Identify and assess consumers’ attitudes and perceptions of the foodservice industry's role
Evaluate and assess foodservice workers attitudes towards overweight and obesity
Review and synthesise alternative courses of action to develop operational and strategic agendas.
